Some kind of VPN/remote desktop app would be nice, but I can't see it as a system selling point.

The iPad will never run a usable virtual machine if that's what you mean BH.

Anything with a internet connection will run the virtual machines at work. 

I was thinking I could use the ipad with the keyboard. I'd just leave the keyboard at work.

Ok, so you're not talking about a VmWare/VirtualBox/Parallels/etc virtual machine,
you mean some form of remote desktop.  Yeah, it can handle that.
